Durian is acknowledged as the “king of fruits” in Asia, and for good reason – apart from its imposing thorns and appearance, it is delicious and creamy and by itself makes for a rich and satisfying meal. Durians are versatile and can be cooked with rice in addition to being turned into a variety of food items, like durian cake, or dodol, and durian ice-cream.

While durians should be eaten fresh whenever possible, here’s a suggestion for making durian ice-cream from leftovers.

(This recipe serves 2 people)

Ingredients:

  • 2 small or 1 medium-sized durian
  • 2 small plastic freezer containers

Preparation:

  1. Choose a slightly over ripe durian. Slightly mushy flesh makes for an ice-cream that is creamy and rich.
  2. Simply scrape the durian flesh into a plastic container suitable for freezing.
  3. Put this into the freezer. It will keep for up to 2 months.
  4. Before serving, take the container out of the freezer for about 5 minutes.
  5. Turn the container upside down and let the durian ice cream pop out into a dessert bowl. Serve it as is, in order to get the full flavor of the durian in its frozen form.

    Note: If you do not like the pulpy taste of the ice-cream, whiz it in a blender for about a minute before freezing.
